We almost forgot that the lovely Southern California town of Riverside is holding it’s Restaurant Week until June 30th. Restaurant Week is an annual event where downtown Riverside Restaurants offer special menu items in order to showcase their food to the community.

Within the last decade, the restaurant and food industry has gained in popularity like never before. Now Chefs are viewed in the same light as Rock Star Celebrities, and with celebrity comes all the craziness. In this case the mayhem is being caused by a famous fungi known simply as “truffle.”

Truffles are becoming scarcer due to climate change and higher demand. This has increased the price of truffles to all time highs, making them part of an underground foodie black market. People are robbing, intimidating, punking, thugging, and doing whatever to get their hands on this prized fungi…

The Truffle Game is CRAZY Ya’ll! Wish I could afford some French Truffles for cooking. Oh well…

My Recipe: Karmaloop, 40oz Van & New York’s “Infamous” Chopped Cheese

I realize I have only posted one food post since starting this blog, so after seeing this video I was inspired to post my version of New York’s Chopped Cheese.

My delicious recipe is below. You may notice that I do not give exact measurements. My goal is to force you to use common sense and “trial and error” in order to create the perfect recipe to your liking. You decide how much or how little of each ingredient you would like to use.

Spicy Ginger Cream Cheese Spread

Cream Cheese, softened

Minced Jalapenos

Minced Pickled Ginger/Gari Shoga

Pepper

  1. Combine the above ingredients in a bowl and mix until smooth.
  2. If you think you need more ginger, add more.

If you want the cream cheese to be spicier after you taste it, then add more Jalapenos. It’s all up to you.

You may want to leave the cream cheese out of your fridge to allow it to soften, this will make mixing so much smoother.

Garlic Bread/Toast

French Bread or Texas Toast

Unsalted Butter

Minced Garlic

Salt to taste

  1. Combine butter, garlic and salt in a large bowl.
  2. Mix these ingredients in the bowl until well combined.
  3. Spread this mixture on the french bread or toast and toast the bread.

Chorizo Ground Beef

Beef or Pork Chorizo

Ground Beef of Your Choice

Salt and Pepper

  1. Set your skillet at low heat and add chorizo.
  2. Cook chorizo until it melts and is fully cooked.
  3. While chorizo is cooking, place ground beef in a bowl and season with salt and pepper.
  4. Once chorizo is fully cooked, add seasoned ground beef to the pan. Cook ground beef to your preference (rare, medium rare, medium, well, etc.).

Suggested Condiments

Bacon

Sunny Side Egg

Cheese Slices, Cheese of your Choice

Tomato Slices

Avocado Slices

Shredded Lettuce

Caramelized/Grilled Onions

Pickled Vegetables

Barbecue Sauce

Mayonaise

Mustard

Combine all of the above ingredients in any way you like to create your sandwich.

If you want your sliced cheese melted:

  1. You can wrap your sandwich in a paper towel, pop it in the microwave and heat it until the cheese is melted. Don’t leave it in the microwave for too long because the cheese will become an overheated mess.
  2. You can also wrap the sandwich in foil and pop it in the oven to heat the sandwich and melt the cheese. This my favorite method because the bread wont get soggy and will have a nice crispness.

I like to serve these delicious sandwiches with a side of French Fries, but of course you can create any sides you want.

WING SAUCE RECIPE #1: Gingered Teriyaki

One of the dopest recipes for wings ever.  No Wing Stop, no chain Restaurant recipes, just Professional Culinary goodness.

WING SAUCE RECIPE #1: Gingered Teriyaki

Ingredients:

  1. Ginger
  2. Soy Sauce, measured by Weight
  3. Sugar, measured by Weight
  4. Red Wine
  5. Garlic
  6. Green Onion
  7. Pinch of Chinese Five Spice
  8. Pinch of Ground Star Anise
  9. Sriracha to taste

I will update this recipe with instructions later.  I usually do not give amounts for ingredients because I myself rarely use exact measurements for cooking.  One rule you learn as a cook is to adjust flavors as you go along.  If the sauce isn’t sweet enough, add more sugar.  If you want a stronger onion flavor, add more onion, and so on and so forth.  For now, study the ingredients and become familiar with the flavors.  You won’t learn how to cook without recipes, and therefore become a better cook yourself, if you don’t study the flavors of your ingredients.  Any well-experienced Chef can look at the above ingredients and immediately figure out how to make this sauce with no instructions or measurements. Business Cards: Easy Step to Looking Professional

I received some brand new business cards in the mail today to make it easier for me to exchange contact information when I am talking to other business people, professionals, employers, or potential customers.  I can’t stress enough how important it is to have business cards in order to make yourself standout and look professional in this rough economy.  It surprises me when I meet other young business people such as myself who are looking for employment and/or call themselves professionals, yet they do not have a simple business card.  How do you expect to compete among the countless other Business School graduates in this country and around the world without this simple and easy to make tool.  In fact, it doesn’t matter what you studied in college or what professional field you are working in, YOU NEED BUSINESS CARDS…PERIOD!  So I am suggesting that if you do not have business cards, make some!

BOTC Presents: “Fashion’s Night Out”

This Thursday, Downtown Riverside, California will be turned into ONE BIG FASHION EXTRAVAGANZA!  A recently opened Boutique, BOTC (Back of the Closet) Boutique, will be hosting a Fashion event, “Fashion’s Night Out,” that is sure to please the fashionista in all of us.  As a San Bernardino, CA resident, I have never heard of or seen any event like this in the Inland Empire of Southern California…NEVER!  Many Boutiques and Vintage shops have come and gone through Redlands and Riverside, but with the initiative the store owners are taking to put together an event like this, it seems this boutique will stand the test of time.

There will be a RUNWAY SHOW, PERFORMANCES (K’SANDRA), DJ (DJ RUDEBOY), SHOPPING, FOOD, BAR, CELEBS, STYLISTS/DESIGNERS (MR. BRADSHAW, JESSIE J, LOR-E), THE WHOLE NINE.  This event will take place at the Crescent Jewell Restaurant, 3597 Main Street, Riverside, CA 92501, running from 8PM-1AM.  I’m super excited about this event, and encourage anyone who lives in the Southern California Area to attend.  You won’t be disappointed.  THIS IS A 21 AND OLDER EVENT!
